New hosts, new kitchen, same soul
A New Chapter
From the 2026 season, Allinge Badehotel welcomes new hosts. Madeleine Tejnby and Christian Milling take over daily operations — with a shared vision of building on the place's history while creating new experiences for guests.
They bring experience from boutique hotels spanning Vietnam to the Danish islands, with a particular strength in food, drink, and hospitality. Their approach is rooted in the local: Bornholm ingredients, collaboration with the island's producers, and a belief that the best experiences come when you take your time.
Madeleine & Christian
Madeleine and Christian are a couple who have worked in hospitality for over a decade. Christian is a trained chef and baker, and together their path has taken them from boutique hotels in Vietnam to Danish islands. They bring both international perspective and a deep understanding of the Danish badehotel tradition.
With strong expertise in food and beverage, they see the hotel as more than a place to sleep. They want to create a setting where breakfast is the first experience of the day, where an afternoon in the garden can end with a glass of wine and a charcuterie board, and where guests feel at home from the moment they step through the door.
New in 2026
A sauna by the sea
In 2026, we are adding a sauna to the hotel. Think: the heat of the sauna, a cold plunge in the Baltic, and then breakfast in the garden. It is a natural extension of the badehotel tradition — and of the Nordic approach to well-being.
The sauna will be available for hotel guests and is yet another reason to slow down and enjoy the pace of Bornholm.
A renewed kitchen
Madeleine and Christian are laying a new foundation for the hotel's food and drink experience. It is not about doing more — it is about doing it better, with respect for the place and the season.
Breakfast at Restaurant Loftet has been reimagined from the ground up. Expect freshly baked Bornholm bread, sourdough rye, homemade preserves, local cheeses, smoked specialties from the island's fishermen, and warm dishes with Bornholm ingredients. Coffee is from Bornholm roastery Sueños, and there is a mimosa station for those who want to celebrate the morning.
In the afternoon, Byskriver Baren opens with a charcuterie board — the Byskriver Board — assembled from Bornholm cheeses, local charcuterie, homemade spreads, and house-baked bread. Alongside it: Bornholm beers, a signature gin & tonic, and a curated wine list.
In the evening, Restaurant Loftet's Honesty Lounge offers small but good things — roasted nuts, Bornholm chocolate, liquorice, and other local tastings — perfect for a quiet evening with a glass of wine or an after-dinner drink.
